Gluten Free Gingerbread Men

I absolutely love baking Gingerbread men at Christmas time, even in sunny 40 degree heat in Perth , Western Australia! The aroma of the spices baking in the oven give me a warm and fuzzy feeling. The kids love this recipe too, it's so easy to make, delicious and of course gluten free!

Description

These gluten free gingerbread men are a must for baking at Christmas time! They are fuss free and delicious. They can also be made ahead of time and frozen until ready to enjoy.

Ingredients
  • 100 g Butter (softened)
  • 100 g Dark Brown Sugar
  • 1 Egg
  • 50 Golden Syrup
  • 250 g Gluten Free Self Raising Flour ((I use Coles or Aldi Brand))
  • Pinch tsp Salt
  • 1/2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 2 tsp Ginger
  • 1/2 tsp Mixed Spice
Instructions
  1. Preheat oven to 180C.

  2. Combine butter and sugar in a large mixing bowl with a hand mixer on medium speed until light and fluffy.

  3. Add egg and golden syrup and mix through.

  4. Add all other ingredients and mix until well combined.

  5. Dump the dough onto some cling wrap and form a log shape. Dough will be sticky. Cover with cling wrap and chill for one hour in the fridge.

    I use the cling wrap to help form the log as dough is quite sticky.
  6. Sprinkle cornflour on work surface and roll out dough. Using a gingerbread man cookie cutter, gently cut out the dough.

  7. Place the gingerbread men onto a baking tray lined with baking paper, leave space in between each one.

  8. Bake in the oven for approx. 15 minutes until golden brown. Leave to cool before enjoying.

Note
  • Can be iced once cooled.
