A gluten-free apple crumble is a delightful dessert made with tender, cinnamon-spiced apples topped with a crisp and buttery crumble topping.
This comforting dessert offers all the flavours of a traditional apple crumble while accommodating individuals with gluten sensitivities or dietary restrictions.
Preheat oven to 180C. (Not fan forced) and prepare a springform cake pan with baking paper.
In a large bowl combine the flour, almond meal, sugar, cinnamon and baking powder.
Add the butter and using your fingers work it in to the flour mix. Once all butter is worked in and the mix resembles a crumble. Add the water and continue to mix through with your fingers until well combined. Mixture should still be loose and crumbly.
Add 2/3 crumb mixture to bottom of springorm pan and press downto form a base. Bake in the oven for approx. 15 mins or until slightly golden and firm. Remove from oven and set aside to cool.
Meanwhile using hand beaters, mix mascarpone and sugar in a large bowl until well combined.
Add in eggs 1 at a time then vanilla extract and apple cider vinegar. Mix until smooth and creamy and well combined.
Pour the creamy filling on top of the crust base and arrange the sliced apples on top to cover the filling. Then add the remaining crumble mixture on top.
Bake in the oven for approx. 1 hour or until golden brown on top. Allow torta to cool to room temp.
