Mango bread is a delectable baked treat that beautifully marries the sweetness and tropical essence of ripe mangoes with the comforting texture of traditional bread. This moist and flavourful bread is made using ripe mangoes, which infuse it with their distinctive fruity aroma and rich, luscious taste.
Preheat oven to 160C. (Not fan forced) and prepare a loaf pan with baking paper.
Chop Mango and dice into small pieces.
In a large bowl combine butter and sugar with a hand mixer.
Add all other ingredients and mix until well combined.
Pour batter into prepared pan and bake for approx. 50 minutes until golden brown and just cooked through.
Remove from oven and let cool before slicing.
