In this recipe you will see how easy it is to make gluten free cupcakes! They are simple and delicious and ready in no time. Baking gluten free does present some hurdles but these cupcakes are perfect for beginners or anyone looking for a quick and easy dessert option and turn out light and fluffy every time!
Preheat oven to 160C. (Not fan forced) and prepare a muffin pan with 8 cupcake casings.
Place all cupcake ingredients in a large bowl and with a hand mixer, beat on medium for 2 minutes until smooth.
Fill cupcake casings about halfway then place in the oven and bake for approx. 15 minutes or until just slightly golden on top. Becareful not to overbake so check at 10 minutes.
Once cupcakes are cooled, place all icing ingredients in a clean large bowl and beat on medium until light and fluffy. If it is too dry add a little more milk. Should be smooth but not dry or runny. A little food colouring can be added.
Pipe or spread icing on top of cupcakes and decorate to your liking.
