Gluten Free Plum and Almond Traybake

Preheat oven to 180C. (Not fan forced) and prepare a square (approx. 20cm) cake pan with baking paper.

Prepare the plums by slicing in half and removing the pip. Put aside.

In a large bowl cream together the butter and sugar with an electric hand mixer.

Add in the eggs one by one and mix well after each one.

Fold in the flour, almond meal, baking powder and vanilla extract until just combined. Place batter into prepared dish and spread evenly over base.

Place plums evenly over the top of batter and press in slightly. Sprinkle a little extra sugar over the top.

Bake for 35 minutes or until golden brown. Remove from oven and allow to cool. Sprinkle over icing sugar and serve.
